Rice Pilaf

Rice Pilaf  is a very versatile side dish. You can add different spices to give it a different flavor or you can add meat to it to make it more like one of those box meals. Honestly though, this tastes much better.

Ingredients

2 Tbsp. Butter
½ cup  Orzo
½ cup  Onion, diced
2 cloves Garlic, minced
½ cup  Rice
2 cups Chicken Broth
½ Tbsp. Parsley Flakes (optional)

 

   Directions

  1. Melt the Butter in a lidded skillet over medium-low heat.
  2. Add Orzo to Butter, stirring until golden brown.
  3. Stir in Onion and cook until onion becomes translucent.
  4. Then add Garlic and cook for 1 minute.
  5. Mix in the rice and chicken broth.
  6. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  7. Remove from heat and let stand for 5 minutes, then fluff with a fork.
Double Batches Only use 3 Tbsps of Butter. If you use a full 4 Tbsps it comes out kind of greasy.
Browning the Orzo Don't worry about the Orzo being more than a golden brown.. It can go to a reddish brown and be just fine.
Liquids Use what you have Chicken, Beef, Pork. Broth or Stock. Whatever goes..
Box-Meal Style Add 1/2 to 1 pound of meat to a double batch (depending on how meaty you want it) when adding the rice and broth.
Parsley Flakes Not necessary at all. It's just for aesthetic purposes.
